Every batch of beans behaves differently in the roaster. We do not rely on push-button automation. Instead, we use our senses to watch the color change, listen for the cracks, and smell the developing sugars.
By carefully controlling the heat and air during the roast, we highlight the unique character of each coffee. We roast exactly what we need each week, so you only receive the freshest beans possible.
